Chilean start-up The Not Company (NotCo) created a neural network that replicated the flavor and texture of meat and dairy products using only vegan ingredients.
The AI, called Giuseppe, uses molecular structure sampling to find plants which have a similar microscopic cellular organization to eggs, milk, meat and cheese. It then proceeds to add ingredients which boost the nutritional value of the product, while not detracting from its taste.
NotCo aims to create a more eco-friendly, sustainable and healthy way of producing meat and dairy products. The company’s current product lineup is consisted of NotMilk, NotHotdogs, NotChocolate and NotMayo.
